My kids declared I'm the coolest mom ever and frankly I agree. (Like I'd deny that!)
I made them grahm cracker ice cream sandwiches for snack time.

I would recommend thinking ahead & giving the sandwiches some time in the freezer. Graham cracker ice cream sandwiches are much easier consumed when the crackers are a tad soft - ours just squished the ice cream out the sides. But hey, I served ice cream for a snack today & that's what really matters!

Those make great snacks - my kids used to love them too. Did you ever try them with chocolate grahams? They're like an ice cream sandwich.
Yummy! Now I want one... And all we have is medicinal strength chocolate. Delicious, but not a graham cracker ice cream sandwich!
